To make it you'll need 1 cup of diced pineapple, 1/4 cup of diced red onion, 1 jalapeño pepper, seeded and finely diced, 1/4 cup of fresh cilantro, 2 tablespoon of lime juice, and salt to taste. Mix all the ingredients and you can use it as a topping for grilled fish or chicken, or serve it as a dip with tortilla chips.
 
Note that Pink Pineapple is a genetic variation of traditional pineapple, in certain countries it might be hard to find them and they might be more expensive.
